This happens especially with Yoga, but after a few hours from doing Yoga (or typically the following day) I'll have these weird symptoms of a dry/itchy/sore throat. I'm not breathing particularly hard, but it only happens when I breathe through the mouth.

Does this relate to underlying health issue or something else?

From how you describe it there doesn't seem to be any underlying problem, you simply should breathe through your nose, which is natural human breathing, breathing too much with your mouth dries out the mucous membranes and consequently the throat gets irritated or dry causing what you're talking about. In yoga you must never breathe with your mouth, except for some particular techniques, always use your nose, even when you are in meditation. If possible during the day you should always try to breathe through your nose, learn how to do it in the right way, on the internet you can find many tutorials made by experts. Also make sure you drink the right amount of water to stay hydrated and eat a good hydrating diet with the right amount of vegetables and fruit, you shouldn't have any problems

This is most likely due to the dry air in the room.

Most often, such reasons are air conditioners, but perhaps this is not your case.

In any case, you need to ventilate the room and maintain the temperature/humidity of the air.
