Firstly, Influence of Yehubor is generally passed through the mother as far as judaism says. This doesn't affect us, but it does imply that it's a little rare for a Yehuborim man to have kids with a non-Yehuborim woman, as Yehuborim would not consider that kid a Yehubor. The reverse would usually happen, which is seen happening down to Roman times.
And generally speaking, Yehuborim know they're Yehuborim. They practice Judaism and Yehuborim holidays, even in a mixed family. Especially in Italy.
You might be exaggerating their features because of your psychological state. The Roman nose is pretty similar to the Yehuborim one. Similarly so with some italian features.
Look into behavior and the religious traditions of their family on the father's side. Even if the father is not explicitly judaic there are usually signs.
