I actually theorize that changes in hair and eye color might be the easiest to achieve of all physical changes through biokinesis. I do not know the implications of altering the chemical balance of melanin and what it would mean for the rest of the body, but that is all it takes, in theory at least.

I would not be so sure. Overall processes that are controlled by autonomous parts of the brain can be influenced and even directly controlled including things like rate of pulse, blood pressure, water filtration, hormonal balance, and so on and so forth should be easier to modify than what you describe.
