If you have the right privacy, creating your own altar and offering food that you made at the Altar to the Gods still counts or does it require actual statue of the Gods from the ancient times to do so?

If no to the latter, then when should you remove the food from the altar? Is throwing it away a bad thing? Or would the Gods have the power to actually eat the physical food you offered?

Offerings of food do not serve a practical purpose, a symbolic use at most. Offering energy and doing God's rituals, among other activities are much more beneficial and serve practical purposes.

You can dispouse your offerings in some diffrent ways. For example you can burn them (llike Ancient Greeks), give them back to nature (like Shamans), offer them to the homeless people or your guests (like Buddhists) etc. Find the best way that works for you!
